NYC Pancakes in NZ

Pancakes were a weekend family staple back in the Upper West Side. For our first weekend day in our house, it was the unanimous choice for breakfast. Sarah & Paige each had a video chat scheduled with friends back in NYC, so Sadie took the lead as head chef. I played sous chef and camera man.

Upper West Side Pancakes

  • 2 cups whole wheat flour

  • 2 eggs (beaten)

  • 2 ripe bananas (smashed)

  • 2-3 cups milk

  • 1 tsp vanilla extract

  • 1/2 tsp salt

  • 4 tsp baking powder

  • Olive Oil (4-5 tbsp in batter & in the pan for cooking)

  • Almond or Peanut Butter (optional to smear onto your cooked pancake)

  • Frozen Corn (add to batter just before cooking...it's really good, try it!)
