I have what I’d consider an “inside, inside” joke that I chuckle to when I tell it to myself. There’s the farm to table movement, but I’ve coined an iteration: “captivity to table”. Think fast food and frankly 90% of food consumption in the US.
Our dinner with Dan & Bryan in Montreal was NOT captivity to table.
“Dan the Waffle Man”
Dan and Sarah struck up friendship in 1998 during Northwestern study abroad in Seville, Spain. Dan’s always been a food lover, blogger and publisher of three cookbooks.
This has earned him the label of “Dan the Waffle Man” in our family. Dan has “sat” quietly on our NYC bookshelves for years; the result is sort of royalty status with our young food lovers, Paige and Sadie.
Jean Talon Market
Our day started with food shopping at this well known food market in Montreal. Menu was discussed - salad and pasta - as with any serious chef, what exactly depended on what looked good that day at the market. Dan steered us to his favorite vendors.
Bespoke Menus
Inspired by Aunt Kasey’s menus for Papa’s 75th birthday, Sadie created a visual menu for the dinner party, complete with pictures of ingredients. Sadie also uniquely name the dishes for our guests:
Starter Course - “Dalad Salad” (Dan + Salad)
Main Course - “Basta Pasta” (Bryan + Pasta)
Kitchen Coup d'etat
When we got back to Dan & Bryan’s flat, it was time for the Bohagirls to take over. Dan sat on his hands and bit his tounge as the two young chefs made his kitchen a mess and dulled his best knifes.
A Michelin Star On Opening Night?
Great food (no captivity to table here, haha). Awesome friendship. Happy Patrons.
Forget one. This restaurant gets 3 Michelin Stars on opening night!
Thanks Dan the Waffle Man!
